rainy day menu: Chocolate Muffins

Rainy days can be so awesome and cozy. Sometimes you just need 
them, right? Yesterday we had one, and it was 
much needed. 

Usually on rainy days we get together with the neighbors and play. We
put on a disney movie and make some popcorn
for the kids. Then Amor and I have some
chats over some hot tea and usually end up baking chocolate muffins.


These chocolate muffins are the best. I found the recipe when I was nursing Lyla
and she had dairy/egg/soy issues. So this recipe is free of those things,
but so delicious!


Here's the recipe:

  • 1.5 cups all purpose flour
  • 1 cup white sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1 tsp distilled white vinegar
  • 1 cup water
Sift together flour, sugar, cocoa, baking soda, and salt.
Mix oil, vanilla, vinegar, and water in separate bowl, then add to four mixture.
Beat until smooth.
Bake at 350 for about 8-10 mins.

Sometimes we get experimental and add in some chocolate chips. Yesterday we decided to try a new frosting recipe.


Gasnache Frosting

5.5 oz semi-sweet chocolate chips
2/3 cup heavy cream

Heat the heavy cream to a boil and pour over chocolate chips. Stir until smooth.

I thought it was really good, but for me that is a whole-lot-a chocolate in one bite!

Lately I have been craving some meat sauce spaghetti. What else could go 
well with a rainy day? It just sounded so delicious. So Marco
went to the store and made some for dinner. 
It turned out so amazing. I can't
wait until we have it again :)
