On the Menu: Pizza

This week was a short week for us, but we made one of our favorites: Pizza! Since Nonna is here, she made the real dough for us. But we usually make our pizzas on pitas and they are super yummy and healthy. What you need: large pitas (we buy fresh ones from a local store called Phoenicia and freeze them), canned diced tomatoes, a blending or puree tool, oregano, salt, mozzarella cheese, and whatever else you like on your pizza! I really like mushrooms lately, so I've been doing those and onions.


First Preheat your oven to 350 F. Then puree your canned tomato and spread over the pita. Add a little salt and oregano and whatever else you like on your pizza, then bake for about 8-10 minutes. After that, take it out, add your cheese, and bake for another 5-8 mins. That's it! So easy and deliciously crunchy :)

I made another of our favorites this week...blueberry pancakes...yummy!!! The warm blueberries make the pancakes taste so much more delicious. I use the Quaker brand of oatmeal pancake mix, organic blueberries, and sugar free maple syrup.

We also ended up going out to one of our favorite restaurants. It's a hibachi grill, and it's really yum! I got my favorite chicken fried rice!
