Zucchini Bread

I love love love making this bread in the fall. It doesn't really feel like fall weather here yet, but this bread is a must! It's so yummy warm with a little butter on it and a glass of milk....mmmm....


3 eggs
2 cups of sugar
1 cup of vegetable oil
2 cups of raw peeled zucchini, grated
3 teaspoons of vanilla extract
3 cups of flour
1 teaspoon of salt
1 teaspoon of baking soda
1/4 teaspoon of baking powder
3 teaspoons of cinnamon
1 cup of chopped walnuts (optional)
1 cup of raisins (optional)

preheat oven to 350

1. beat eggs until light and foamy
2. add sugar, oil, zucchini, and vanilla

3. combine flour, salt, baking soda, baking powder and cinnamon in separate bowl, then add to mixture

4. stir until well blended then add the nuts and raisins
5. pour into 2 loaf pans and bake for 1 hour
